Smoked Pork, Cider & Orchard Apple Sausages — A Celebration of the Orchard
Crafted in small batches here at Applecross Farm, our Smoked Pork, Cider & Orchard Apple Sausages are a true homage to the British apple industry and our family’s fifth-generation roots within it.
Made using high-quality Cheshire pork, these sausages are built around flavour, provenance, and craftsmanship. Created in collaboration with Tom Oliver of Oliver’s Fine Cider and my Dad Dave from Orchards Farm Apple Juice, this sausage brings together multiple elements of the orchard into one truly unique product.
Each batch features carefully prepared pork fat cubes, cured and infused with Oliver’s cider, adding bursts of richness and depth throughout. We also fold in cider-pickled mustard seeds and green peppercorns steeped in cider, bringing gentle acidity and subtle spice that beautifully balances the pork.
During the smoking process, the sausages are lightly spritzed with a reduction of apple juice and organic apple cider vinegar before being slowly smoked over apple wood from our family orchards. The result is a deep, balanced flavour — savoury, slightly sweet, lightly smoky, and unmistakably orchard-led.
These sausages were designed not only as a food product, but as a true food and drink pairing experience. We highly recommend enjoying them alongside a glass of Oliver’s Fine Cider to fully appreciate the layers of orchard flavour running through the sausage from start to finish.
For those not drinking alcohol, they pair equally beautifully with fresh Orchards Farm apple juice, allowing the sweeter apple notes and smoke to really shine through.
Smoked to an internal temperature of 72°C, they are fully cooked and ready to enjoy — simply re-warm gently over coals, in a pan, or under the grill for a beautifully juicy, flavour-packed meal.

These will arrive next day frozen in insulated packaging. All frozen products are packed in fully insulated, recyclable boxes with ice packs to ensure they arrive safely chilled or frozen.
