Pork, Cider & Orchard Apple Sausages — A Celebration of the Orchard

Crafted in small batches here at Applecross Farm, our Smoked Pork, Cider & Orchard Apple Sausages are a true homage to the British apple industry and our family’s fifth-generation roots in it.

Made using high-quality Local British pork, these sausages are built around flavour, provenance, and craftsmanship. We have worked in collaboration with Oliver's Fine Cider and Orchard's Farm Apple Juice to bring together multiple elements of the orchard into one truly unique product.

Each batch features carefully prepared pork fat cubes, cured and infused with Oliver’s cider, adding bursts of richness and depth throughout. We fold in cider-pickled mustard seeds and green peppercorns steeped in cider, giving a gentle acidity and subtle spice that cuts beautifully through the pork.

To achieve the perfect texture, we use natural gelatin bloomed in Orchard’s Farm’s apple juice, creating a firm, juicy bite without the need for fillers or binders — just clean, honest ingredients.

During the smoking process, the sausages are lightly spritzed with a reduction of apple juice and organic apple cider vinegar, helping to build a rich glaze and enhance the natural sweetness before being slowly smoked over apple wood from our family orchards. The result is a deep, balanced flavour — savoury, slightly sweet, and unmistakably orchard-led. These are uncooked and unsmoked simply cook gently in a pan or under the grill for a beautifully juicy, flavour-packed meal.

Perfect for BBQs, breakfast rolls, or served with buttery mash and a rich cider gravy — this is field-to-table food with heritage, purpose, and a story in every bite.

These will arrive next day frozen in insulated packaging. All frozen products are packed in fully insulated, recyclable boxes with ice packs to ensure they arrive safely chilled or frozen.
